Davide Canella was born in Lucca on the 9th of June 1972. In 1989 he gets his graduation as a cook on the 'Technical Institute Hotelier "G. Minuto" in Marina di Massa Italy. His career began when was only fourteen years old at the "Restaurant Tenda Rossa" at Marina di Carrara as an apprentice. Afterwards, he has a few experience in Italy and abroad, Florence, Versilia, Riva del Garda and Germany until February 1997 when he start working at "La Terrazza Restaurant" Hotel Eden in Rome. In 1998, in Prague - Czech Republic , for the first time the he has the role as Executive Chef on the worldwide renowned "Restaurant Ostroff".
Returns to Italy as a Chef at the Hotel Palazzo Mannaioni which provides courses of typical Tuscan cuisine for the International Kitchen and in the same period he’s the consultant for “Bacco Restaurant” in Berlin – Germany. From 2001 until 2003 he works as part of the team Orient Express at the Hotel Quinta do Lago in Algarve - Portugal as Executive Sous Chef. In 2003 he returns to Italy and as Executive Chef directs the well known restaurant Locanda dell’Amorosa - Sinalunga - Siena until February 2005. From March 2005 until March 2010 he works as Executive Chef for the restaurant “Il Pievano "Castello di Spaltenna, located in Gaiole in Chianti.
On the March 2010 his dream became real… He opens his restaurant where he puts a personal mark, experience and passion in each plate.
